Samurai Noodle is a tonkotsu ramen shop in Houston: eighteen-hour pork broth, noodles cooked to order, counter service, lunch and dinner every day. Below are five different designs for the same shop — same menu, same broth story, five different moods. Open any of them.

The shop, briefly.

Tonkotsu Classic leads the menu — 18-hour broth, chashu, ajitama, black garlic oil — followed by Spicy Miso Tonkotsu, Shoyu, and a meat-free Veggie Broth. Gyoza, karaage, edamame, and pork buns cover the sides; Japanese beer and sake cover the rest.

Noodle firmness is your call: kata, futsu, or yawa. Everything marked with a price on these pages is a sample — the board on the wall by the counter is the real menu.

The shop runs on a simple rhythm: one broth batch a day, noodles cooked to order in ninety seconds, counter seats for watching the kitchen work. Lunch moves fast, dinner slows down, and the last tonkotsu pour goes out at 9:30 so the pot can be scrubbed for the next morning.
