The pot never drops below a hard boil for eighteen hours — skimmed by hand, topped up by feel. By evening the broth is milky, thick, ivory-colored, and it coats the back of a spoon. We make one batch a day. When it is gone, the tonkotsu bowls stop until tomorrow. That is the deal, and regulars know to come early.
