THE BROTH, IN SHORTPork femurs and neck bones, water, nothing else. A hard rolling boil for eighteen hours, skimmed by hand, topped up by feel. The agitation breaks the marrow down until the soup turns milky and coats the spoon. We make one batch a day; when it runs out, the tonkotsu bowls stop until tomorrow. No powder, no concentrate, no shortcuts — the schedule is the recipe.
HOW TO ORDERWalk in, take a counter seat, order by number. Pick noodle firmness — kata for firm, futsu for regular, yawa for soft — noodles cook in ninety seconds. Tare first, broth, noodles, toppings: that order never changes. Kaedama gets you a second round of noodles in leftover broth. Pay at the counter when you leave. HOUSE NOTESTakeout packs noodles separately so nothing goes soggy — call ahead and it will be ready. Veggie broth ramen is fully meat-free; edamame and veggie gyoza round it out. Spicy miso runs medium heat; extra chili oil lives at the counter, free. First visit? Classic, kata noodles, three sips plain. Prices marked with * are samples.
