Zen Ramen & Sushi Burrito is a small Seattle kitchen with an unreasonable standard: the tonkotsu pot starts before sunrise and does not stop all day. Pork bones, a rolling boil, hand-skimming — by dinner the broth turns milky and sweet, the way it is supposed to taste.
Alongside the ramen, we roll sushi burritos the moment you order — warm rice, fresh fish, crunch, sauce, wrapped tight in nori — and build poke bowls on rice we season every morning. Three formats, one rule: nothing pre-made, nothing rushed, nothing we would not eat ourselves.
