Zen Ramen & Sushi Burrito cooks the way our grandmothers insisted: the pot starts before sunrise and does not stop for eighteen hours. What lands in front of you — ramen, sushi burritos, poke — is fast food made slowly.

CHAPTER ONE — 01

The pot that never hurries.

Pork bones, chicken frames, and aromatics go in while the city sleeps. A rolling boil — never a simmer — is what turns the stock opaque and sweet. Someone skims it by hand all day long. By dinner, eighteen hours later, it is tonkotsu: milky, rich, and deep in a way no shortcut can fake.

We taste the broth, not the clock. Eighteen hours is the average, not the rule — some pots need nineteen, and they get nineteen. When a pot is not right, it does not get served. We would rather run out of our best bowl at eight o'clock than serve a bowl we are not proud of at nine.

Rolled to order, never before.

The sushi burrito was a late-night experiment: everything we love about a sushi roll, sized like a burrito. Warm seasoned rice, fresh fish, avocado, tempura crunch, house sauces — wrapped tight in crisp nori and sliced so the cross-section does the talking.

Nothing is pre-rolled. A burrito that sits goes soft, and soft nori is a small tragedy, so yours is built the moment you order. Big enough to share. Good enough that you will not want to. Our poke bowls came next, because Seattle asked — line-caught style fish over sushi rice, with sauces we make in-house every morning.

Dine in at the counter, take it home in broth-separated packaging that keeps noodles springy, or let us cater your office lunch with burrito platters and poke bars. Walk-ins welcome — for groups of six or more, call (555) 010-2030. Open Monday to Thursday 11:30–21:30, Friday and Saturday until 22:30, Sunday from noon.
