From the east
coast to the
west, one bowl
at a time.
Zen Ramen & Sushi Burrito started as a small shop with a simple promise: serve the food we grew up craving, and refuse to cut corners on it. Today our kitchens stretch from the east coast to the west coast, but every location still runs on the same rule — the broth pot never hurries. Pork bones go in before sunrise. By dinner, eighteen hours later, the stock has turned opaque and sweet, the way tonkotsu is supposed to taste. Our sushi burritos came from a late-night experiment: everything we love about a sushi roll, sized like a burrito, wrapped in warm seasoned rice and crisp nori, cut in half so the cross-section does the talking. Poke bowls joined the menu because Seattle asked for them — line-caught style fish, sushi rice, and sauces we make in-house every morning. We are a locally owned kitchen, quality driven, and we would rather sell out of chashu at eight than serve a bowl we are not proud of at nine.
THE BROTH
Pork bones, chicken frames, aromatics. A rolling boil for eighteen hours, skimmed by hand, never rushed. The result is a milky, collagen-rich tonkotsu with real depth.
THE ROLL
Sushi burritos are built to order: warm rice, your fish, crunch, sauce, wrapped tight in nori. Big enough to share, good enough that you will not want to.
THE ROOM
Counter seats for solo diners, tables for groups, and a takeout line that actually moves. Steam on the windows, jazz low, chopsticks ready.
