There is a particular pleasure in food that asks something of you. Tsukemen — dipping ramen — arrives unfinished by design: thick, cold noodles on one side, a small bowl of concentrated hot pork broth on the other. You complete it, one dunk at a time, at a counter on Abbott Street that smells permanently of stockpot.

Taishoken Ramen keeps the menu short and the broth long. Pork bones simmer until the soup turns opaque and slick; miso adds fermented depth; chilli adds a slow-building fire. Twelve-odd bowls, sides and combos, most between $18.95 and $20.95 (samples) — each one built around the same conviction that a bowl should earn its steam.

    Order the dip

    Say "tsukemen". Two vessels arrive: cold thick noodles, and a small bowl of concentrated hot broth.

  3. 3

    Dunk and slurp

    A few strands at a time — dip, lift, slurp loudly. The noise cools the noodles and aerates the broth.

    Finish with soup-wari

    Ask for hot clear broth to thin the remaining dip into a soup. Drink it to the last drop, like the regulars.
