Seattle, WA — counter service
Two obsessions under one roof: pork broth with real depth, and chicken glazed over live charcoal. Made to order, served steaming, priced for regulars.
See the menu ↓Short on purpose. Every bowl here earned its place — nothing is filler, nothing phones it in. Prices are samples; the printed menu at the counter is the real one.
Hot.
Fast.
Honest.
Order at the counter. Your bowl lands minutes later. Takeout broth travels separately so the noodles arrive right.
Milky pork broth, chashu, marinated egg, nori, bamboo shoots, scallion. The bowl we are known for.
Clear chicken-dashi broth, soy seasoning, chashu, menma, narutomaki. Lighter, lunch-built.
Charcoal-grilled thigh, house glaze, hot rice, pickled cucumber. The original bowl.
Braised spare ribs, flat wheat noodles, light bonito broth, pickled ginger. Island soul food.
We are a small counter-style shop — no reservations, no fuss. Walk in, order at the counter, grab a seat if there is one, and eat while the steam is still coming off the bowl. Lunch crowds move fast; evenings are slower and steamier.

Ramen for broth people, teriyaki don for grill people, soki soba for the curious. The menu board at the counter lists the day's extras.
Extra egg, extra chashu, extra noodles, spice level — say the word at the counter and we will build it.
Cards and cash both fine. Takeout gets packed with the broth separate, so everything arrives the way it left.
Ramen waits for no one. This is the one rule we actually enforce — the first slurp should burn, slightly, in the best way.
Counter seats and a few tables. Built for solo lunches and quick dinners.
Call ahead and skip the line. Broth packed apart from noodles.
