our story

Broth &
Charcoal

We started Okinawa Teriyaki with two obsessions and not much else: a pork broth we would happily drink on its own, and chicken glazed over real charcoal until the edges catch. The ramen side of the menu comes from long, quiet mornings — bones, aromatics, and a pot that never quite stops moving. The teriyaki side comes from Okinawan home cooking, where sweet-savory glaze meets plain steamed rice and nothing needs to show off. Seattle gets the rain; we handle the steam. Everything is made to order, the noodles are springy, the rice is hot, and the first sip of broth should tell you why we bothered.

Tonkotsu Blackmidnight ramen

Tonkotsu Black ramen in dramatic low light

The tonkotsu, after dark. Same milky pork broth, finished with black garlic oil and a pinch of toasted sesame. It looks dramatic and tastes like it means it — deep, roasted, a little wild around the edges.

Comes with chashu, marinated egg, kikurage mushrooms and nori. The broth clings to the noodles the way it should: completely.

Charcoal Teriyaki Donthe original

Chicken teriyaki rice bowl with pickles

Before there was a ramen menu, there was this bowl. Chicken thighs over real charcoal, glazed and re-glazed until the skin turns to lacquer, over rice that soaks up every drop.

Pickled cucumber cuts the sweetness; scallion keeps it fresh. Simple on paper, hard to stop eating in practice.

Soki Sobaokinawan soul

Soki soba style bowl with rich broth

Our nod to the islands. Pork spare ribs braised until they surrender, laid over flat noodles in a clear, gentle broth. Pickled ginger on the side, the way it is served back home.

It is the quietest bowl on the menu and, for a lot of our Okinawan customers, the one that tastes like somebody's kitchen.
