Chapter 01 — Broth

Four pots, all day.

Shoyu, miso, shio, spicy miso. Each broth gets its own pot, its own clock, its own temperament. Shoyu stays bright and clean; miso goes deep and savoury; shio is the quiet one; spicy miso carries chilli oil we blend ourselves. We taste every pot before the doors open — if it is not right, it does not get served.

Chapter 02 — Noodles

Cut this morning.

Original egg, spinach, chilli, squid ink. Four doughs mixed at dawn, rested, then cut in our kitchen — never bought in, never frozen. Egg for the classic chew, spinach for green freshness, chilli with heat in the strand itself, squid ink for the black bowl that turns heads.

Chapter 03 — The bowl

Ninety seconds.

Noodles hit boiling water the moment you order. Then: tare, broth, noodles, toppings — chashu braised in-house, eggs marinated overnight, spring onion cut to order. Built in front of you, eaten hot and loud. Ramen waits for no one.
