Ajitama Musoshin Ramen
The bowl that made the room famous. Our koji broth, fresh noodles, torched chashu pork belly, menma, and a jammy seasoned egg. If you only come once, this is the one.
Kyoto-style ramen in Roncesvalles, Toronto. House-extruded noodles, a vegetable-and-koji broth you won't find anywhere else in the city, and torched chashu over every signature bowl.
Musoshin is the first North American outpost of a Kyoto noodle shop, tucked at 9 Boustead Avenue just off Roncesvalles. Co-owner and baker Chef Aoi Yoshida brings an artisan's eye to a small, warm dining room with an open kitchen and a front bakery case. The signature broth skips the heavy tonkotsu route entirely: a velvety emulsion of vegetables, pork, chicken, and house-fermented rice koji — lighter than you'd expect, deeper than it looks. Every bowl rides on noodles extruded in-house from premium flour, aged to pull out their quiet flavor. The room is listed in the Michelin Guide, the line at dinner is short and worth it, and the shokupan in the bakery case sells through most days.
Vegetable base layered with pork, chicken, and rice koji fermented in-house. Light body, long finish, none of the oily weight of classic tonkotsu.
Extruded fresh every day from aged premium flour. Springy, clean-tasting, made to match the broth instead of fighting it.

Kelp-and-shiitake broth, white miso, seasonal vegetables, house noodles. Built from scratch for plant-based diners — not an afterthought with the pork fished out.
The signature with heat. Chili oil and spice layered over the koji base for people who measure a good bowl in sweat. Extra napkins are free.
Our broth's backbone is rice koji we ferment ourselves — it gives the soup its savory depth without the heavy, oily body of a long-simmered tonkotsu.
Premium flour, aged to draw out flavor, extruded fresh every morning. They're made to match our broth, not just any broth.
Chashu, menma, eggs, sauces — prepped in the kitchen, not out of a bag. You can taste the difference, or so the regulars tell us.
Chef Yoshida's shokupan milk bread and sweets bake daily in the front case. It sells through most days — come early if the bread matters to you.
We're walk-in only — no reservations. Put your name down at the door and we'll call you when a seat opens.
Signature, vegan, or red. Add an egg, extra chashu, or black garlic if you're feeling decisive.
Your noodles are portioned from the day's extrusion and cooked to order while the broth is ladled hot.
Ramen waits for no one. Eat it hot, finish the broth if you're happy, and check the bakery case on your way out.
