We opened in Guelph with a simple idea. Pull noodles fresh every morning from Canadian wheat on machines we brought in from Japan. Simmer real bone broth for hours, not minutes. Slow-cook pork chashu until it barely holds together. Build a veggie broth from kombu, tomato, and shiitake that stands on its own. Michelin-trained hands, and one address: 17 Macdonell Street. Then we packed the same bowl into frozen ramen — ready in minutes, no assembly — and put it in grocery stores coast to coast.
